With both businesses and our two little daughters to keep up with, I'm a HUGE fan of meal prep and of making something stretch out through the week. I usually prep my meals and snacks on Sunday and Wednesday nights. This makes it easier for us to avoid the fast food trap or overeating. I highly recommend this to anyone looking to change their eating habits. Plan on 1-2 hours on prep day, stock up on Tupperware and zip-lock bags, and boom! Meals are taken care of and it is one less thing on your plate during the weeknights.
However, I know a lot of people tend to get burned out on leftovers – so I created these four dinner meals that can all be created with one super easy chicken recipe! Make the chicken at the beginning of the week and let this chicken spread out and add protein to multiple, delicious meals.
Easy Shredded Chicken
I know this may just seem like run of the mill chicken – but it's anything but. It is moist, tender, flavorful, and perfect as is (picky children will eat it up!). You can also toss it into a salad, lay it over pasta, or eat it as a healthy mid-day snack. This will keep in the fridge for a week, or you can freeze it into portion-size baggies for later use.
Enchiladas are usually a timely dinner to make. Not this recipe! It takes less time than you think, and uses ingredients that you probably already have on hand. Since your chicken is already cooked, just add the ingredients and pop these puppies in the oven for 15 minutes to enjoy fresh, delicious and healthy chicken enchiladas for dinner!
Buffalo Chicken Lettuce Wraps
You've probably heard of P.F. Chang's legendary lettuce wraps. These are a buffalo chicken twist on those, and are sure to make everyone say “mmm” at the dinner table! The best part? It only takes minutes to throw these together. These are a great alternative if you're trying to cut breads.
Chicken Parmesan and Roasted Vegetables
Last but not least, this dish makes a great side for any dinner – but we even eat it as a main course! It's a great way to pack in both protein and a healthy side of greens, and is so delectably seasoned that you'll forget it's healthy!
