Gluten Free Banana Muffins (A follower FAVORITE!)

Gluten Free Banana Muffins, Servings: 12

Ingredients:

  • 1/4 cup softened butter  
  • 1 egg  
  • 1 1/2 tsp. unsweetened almond milk
  • 1 cup premium gold gluten free flour
  • 1/2 cup xylitol or other sweetener of your choice
  • 1 1/2 ripe bananas
  • 1/2 tsp. baking soda
  • 1 pinch salt
  • 1 teaspoon apple cider vinegar (optional, but makes it more moist!)
  • 1/2 tsp. vanilla extract
  • 2 tablespoons chia seeds (optional, no taste difference in recipe)
  • 2 tablespoons flax seeds (optional, no taste difference in recipe)

 
Directions: Mix all ingredients together. Spray a muffin tin or coat with some coconut oil so the muffins don’t stick to pan as much. Fill each muffin tin or use muffin cups 2/3 full with the batter. Bake 375 degrees for 15 min or until golden brown. Cool and serve. Makes 10-12 depending on how high you fill up the muffin tin. Enjoy!!!
