Servings: 6 mini cookie sandwiches
Calories per serving: 38- and less then 1 gram of sugar per cookie!
- 1 Chocolate Brownie Quest Bar
- 1 TBSP coconut flour
- 1 TBSP vanilla whey protein
- 3 TBSP water
- nonstick cooking spray
Preheat your oven to 380 degree F. Unwrap Quest bar and place on microwave safe plate and microwave for 10 seconds (so it's easier to work with). Break/cut bar into 12 even pieces. Roll one at a time into small balls between your palms. Place onto a piece of parchment paper and using a rolling pin (or something similar) roll out into a flat circle. Repeat this 12 times so all the pieces are into 12 small circles. Bake them for 2-3 minutes in the oven. Flip the cookies and lightly spray with the cooking spray (or coconut oil spray) and bake for another 2-3 minutes. Once the cookies are done, let them cool down completely. Mix the remaining (filling) ingredients in a bowl and store (coconut flour, vanilla protein and water). Spoon evenly the mixture on top of 6 of the cookie circles and then use the other six for the tops!
