Crock-Pot Honey Lime Asian Chicken

  • 1lb Chicken Breast
  • 1/4 cup Lime juice 
  • 1/4 cup Low Sodium Soy Sauce
  • 1/8 cup Honey
  • 0.50 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Ground Ginger 
  • 1 cup Brown rice
  • 1 cup Free Range Low Sodium Chicken Broth
  • 1.5 cup of water
  •  1/2 cup Chunk Pineapple In Pineapple Juice 
  • In your crock pot, add chicken breast, lime juice, soy sauce, honey, pineapple chunks with some juice, and seasonings. Cook on low for 8 hours or high for 4 hours. 
  • About a half hour before chicken is done, cook brown rice in 1.5 cup of water and 1 cup of low sodium chicken broth (or just water if you prefer. Chicken broth just helps add flavor.) till done. 
  • When chicken is done, shred with two forks. Serve over rice, with veggies, and enjoy! 
  • Makes 8 servings
